Another way

Try setting the start date and end date to teh same day, but change the repeat settings to continue until the day the user comes back. This should avoid hitting the 6 month limit Bruce refers to.

Steps:
Create a new all day event
Set the start date to the day the user is leaving
Select the "Repeat" link
In the middle section, set the option "continuing for" and then set it to 6 months then click OK
Once back in the entry it should be updated to say how long it will repeat for

Save it and once busytime updates, the user should appear booked
